Jailbreak as you would 3.0 with redsnow and 3.0 ipsw as dev team are yet to update 3.0.1 firmwares to redsnow

open ifile or ssh into iphone/ipod
go to /var/lib/apt/lists and delete everything except the folder marked PARTIAL
reboot and launch cydia, if still crashing.......
